  • 2 medium yellow squash

  • 2 red bell peppers

  • 1 tablespoon of fresh thyme leaves

  • Salt and pepper to taste

Directions

  • Preheat the oven to 375°F (190°C).
  • Slice the eggplant, zucchini, yellow squash, red bell peppers, and onion into 1/8-inch-thick rounds.
  • Spread a thin layer of olive oil on the bottom of a large baking dish. Arrange the sliced vegetables in alternating layers, overlapping them slightly.
  • Sprinkle the minced garlic and thyme leaves over the top of the vegetables. Season with salt and pepper to taste.
  • Drizzle the remaining olive oil over the top of the vegetables.
  • Cover the baking dish with foil and bake for 40 minutes.
  • Remove the foil and bake for an additional 20-30 minutes, until the vegetables are tender and the top is golden brown.
  • Serve the ratatouille hot or at room temperature, garnished with fresh thyme leaves.
